Gauchas ("we", "us", "our") provides handmade Argentine empanadas, asado catering, and event hosting in Copenhagen. We are the data controller responsible for your personal data.

2. What data we collect
We only collect what we need to serve you well. Depending on how you interact with us, this may include:

- Contact details (name, email, phone number) when you enquire, book catering, or reserve the venue.
- Event details (date, guest count, menu preferences, dietary needs such as vegan/vegetarian).
- Billing and delivery information for orders and invoices.
- Any messages or notes you send us by email, contact form, or social media.
Information collected automatically
- Basic technical data when you visit the website (IP address, browser type, device, pages viewed) via cookies and similar technologies — see section 6.
We do not knowingly collect data from children, and we do not collect sensitive personal data beyond the dietary information you choose to share for catering.
3. Why we use your data
- To respond to enquiries and prepare quotes for catering and events.
- To plan, confirm and deliver your order or event at our venue or yours.
- To process payments and issue invoices.
- To send you information you've requested (e.g. a newsletter, if you opt in).
- To improve our website and services.
- To comply with our legal and accounting obligations.
4. Legal basis for processing
Under the GDPR, we rely on the following legal bases:
- Performance of a contract — to handle your booking, order or event.
- Consent — for non-essential cookies and any marketing emails (you can withdraw this at any time).
- Legitimate interests — to run and improve our business, where this does not override your rights.
- Legal obligation — to keep accounting records as required by Danish law.
5. Sharing & third parties
We never sell your data. We share it only with trusted providers who help us operate, and only as needed:

7. How long we keep your data
We keep personal data only as long as necessary for the purpose it was collected, including legal and accounting requirements. Accounting records are kept for 5 years as required by the Danish Bookkeeping Act. Enquiry and marketing data is deleted when no longer needed or when you ask us to remove it.

Under the GDPR, you have the right to:

- Request correction of inaccurate data.
- Request deletion ("right to be forgotten").
- Restrict or object to processing.
- Data portability.
- Withdraw consent at any time, where processing is based on consent.

We take reasonable technical and organisational measures to protect your personal data against loss, misuse, and unauthorised access. While no system is perfectly secure, we work to keep your information safe.

We may update this policy from time to time. The "last updated" date at the top reflects the latest version. Significant changes will be communicated where appropriate.
